Recipe: Cast Iron Pizza

Everyone loves pizza, but not the same kind of pizza. If you learn how to make it yourself, you can tailor it to exactly how you like. I personally like mine with extra sauce and some cheddar cheese.

Ingredients

  • Essentials
    • 26 oz Dough
    • Low-Moisture Mozzarella
    • Any other cheese (cheddar, Parmesan, blue cheese, etc.)
  • Marinara Sauce
    • 1 tbsp Olive Oil
    • 8 oz can of Tomato Puree
    • 5 cloves garlic
    • 1 tbsp Basil
    • 1 tbsp Oregano
    • Salt
    • Black Pepper
  • Toppings
    • Fresh tomato
    • Mushrooms
    • Arugula
    • Whatever you want

Instructions

Part 1: Preparation

  1. Leave out dough at room temperature to warm up
  2. Place a clean cast iron pan in oven
  3. Pre-heat oven to 450º F

Part 2: Marinara Sauce

  1. Saute garlic in olive oil until browned
  2. Add tomato puree and water
  3. Add basil, oregano, black pepper, and salt
  4. Simmer until thick
  5. Set aside

Part 3: Knead Dough

  1. Sprinkle flour over a work surface
  2. Knead out dough flat by:
    • Pressing against surface
    • Lift and slam on surface
    • Lift and let dough stretch itself
    • Add extra flour to lower stickiness
  3. Continue until dough keeps its shape and roughly the size of the pan

Part 4: Assembly

  1. Take out heated cast iron pan from oven
  2. Add some oil into pan and spread out with brush
  3. Carefully lay dough into pan and spread out thin
  4. Brush oil over dough
  5. Add sauce, cheese, and toppings as desired

Part 5: Cooking

  1. Place pan into oven for 10 minutes
  2. Turn on top broiler for 3 more minutes
  3. Remove from oven
  4. Let rest for 5 minutes
  5. Remove from pan
  6. Cut and serve

Notes

If you like a thinner crust, you can split the 26 oz dough in half for the a 9-inch cast iron. It’ll be a bit trickier to knead out and lay into the pan because of how much thinner it is. But this gets it super crispy and light!

Something that has stayed with me since childhood was the sound clip “Pizza Time!” from the SNES game “Teenage Mutant Ninja Turtles: Turtles in Time”. The voice clips had a distinct sound quality and tone that made it so memorable. This made me search up the game’s songs, and eventually got “Pizza Power” stuck in my head.

I remember playing through this game so many times. I have a vivid memory of playing the game with my mom. We were able to get to the “Bury My Shell at Wounded Knee” level. For some reason I got nervous about us failing, so I told her that we didn’t have to play any further.
