Ingredients
- Filling
- 16 oz Cream Cheese
- 8 oz Condensed Milk
- 2 Eggs
- 1 tbsp Citrus Juice (Lemon, Lime, or Orange)
- 1 tbsp Flour
- 1 tsp Vanilla Extract
- Crust
- Homemade
- Graham Crackers or Oreos
- 2 tbsp Butter
- 2 tbsp Sugar
- Alternate: Store-bought crust
- Berry Sauce
- Berries (Strawberry, blueberry, etc.)
- Citrus Juice
- Sugar
Instructions
Part 1: Homemade Crust
- Preheat oven to 350º F
- Crush up crackers or cookies in a bag to make crumbs
- Melt together butter and sugar
- Add melted butter-sugar to crumbs to make it compressible
- Shape into cake pan
- Bake in oven for 10 minutes at 350º F
Part 2: Filling
- Preheat oven to 300º F
- Let cream cheese warm up to room temperature
- Warmer cream cheese will clump up less
- Add condensed Milk, citrus juice, & vanilla extract
- Use whisk or stand-mixer to blend together
- Sift in flour and stir
- Add 2 eggs and stir until smooth
- Pour filling into crumb-filled cake pan
- Gently tap all sides to remove air bubbles
- Bake in oven for 60 minutes at 300 ºF
Part 3: Berry Sauce
- Chop up fruit finely
- Add fruit, sugar, and citrus juice to small sauce pan
- Heat on low temperature to break down fruit
- Use fork to mash up fruit
- Add extra citrus juice to prevent burning
- Once fully thickened, remove from heat
- Use a strainer to extract all the berry sauce from the pulp
- Alternatively, keep the sauce whole as a jam
Part 4: Final Assembly
- Cool cheesecake before cutting
- Serve each slice with some berry sauce
- Enjoy with some milk, tea, or coffee
Notes
To really "wow" people, you can make the berry sauce before putting the filling into the oven. This will let you drizzle the berry sauce into the liquid filling, and bake in a fancy design:
I like the dense, creamy texture of the filing, which is from the fewer eggs and flour used. Using more eggs and flour result in a cake-like texture. I also prefer this recipe because it's not overly sweet, and the condensed milk adds it's own flavor. The citrus juice also adds some acidity to cut the sweetness so that the dish doesn't seem overly rich.
